The Main Event
So here it is. The main event. The wedding banquet. I think this might have been one of the most frequently asked questions about the wedding planning. What are you doing for the dinner. Early on we decided that simple and fun would be the best. I mean, as simple as feeding 200 people can be. So when the idea of real barbecue was thrown out, I lept on it immediately. Now when I say barbecue to Canadians, they immediately think burgers, steaks, chicken, maybe ribs. But that's not what this was. This was a whole hog that was slowly cooked, mostly with hot smoke and then shredded. The whole thing. In fact it was a whole hog and then several Boston butts. As Daphne's father was telling people, all I really wanted at the wedding was pig and beer. But what a pig. It was done by some folks that Daphne's parents know, Lamar and Sandra. Lamar builds custom cookers and they have a small restaurant business as well.
It was fantastic. I loved it. As you can see, they present the whole thing. Head and all. I'm not sure what the vegetarians ate, but I was assured there was something there for them to eat. I can't say enough about the job Lamar and Sandra did on the pig. It was terrific. I scarfed down two plates of pig before resuming my wandering around the wedding talking to people. I was not going to make the same mistake as my parents and not eat at my own wedding. I really wanted to try Lamar's barbecue and was not disappointed. I even snuck a bit of crackling that Lamar did not put out as he deemed the wedding a little too formal an occasion to put out, but had it available in a big plastic bag in the back. I told it there was not occasion too formal for crackling, he just laughed. But it wasn't just the pig. There were numerous sides, too many for me to remember them all. Corn pudding, a coleslaw, a curried fruit dish. So much food that was all great, but it was the pig that I will remember years from now.
