One of my favourite things to get with my coffee is the lemon-raspberry loaf at Starbucks. It is sort of my guilty pleasure. I don't always buy it, but when I do I love it. So I wanted to see if I could make it at home. If you've had it before you'll know it isn't all that complicated. It is a piece of poundcake with a streak of raspberry filling and icing, so I figured it wouldn't be that difficult. I started with the basic poundcake recipe from Cooks Illustrated and made the citrus variation with the addition of the zest of one lemon and one orange. I would have used two lemons, but I didn't have two lemons. Once the batter was mixed though I took a little over half the batter and put it into a small loaf pan lined with parchment paper, followed by the raspberry jam that I had heated a little to loosen up so that it would be spreadable. Then the rest of the cake batter. It was baked at about 325F for just a little over an hour.
I don't really have a recipe for the icing as it was just a little bit of softened butter, maybe a tablespoon and a half, icing sugar and lemon juice all creamed together until it came to the right consistency for topping. Not too loose, but spreadable. I had to adjust the lemon juice and icing a couple of times to get it right, but in the end it had a nice zippy lemon flavour and just a hint of richness from the butter. In the end I think I got it just about right. I think I actually prefer mine because I think the consistency of the homemade pound cake is better than what you would get in a store and I definitely prefer my icing.
Lemon-Raspberry Pound Cake.
225 grams butter
265 grams of sugar
3 large eggs
3 large egg yolks
1.5 teaspoons vanilla extract
1.5 teaspoons water
170 grams all purpose flour
Pinch of kosher salt
Zest of one lemon and one orange
1/3 raspberry jam
You are a person after my own heart! I was searching for the exact same thing. I will give your recipe a try. I was trying to figure how they did the raspberry part. Thanks for the info :)
